Easy Midweek Pasta {Anything goes!}

It is October! Can you believe it!?
We are into the whole routine of school now and welcoming any simplicity into our busy school/work week. You would think that would mean that bedtimes run smoothly and that the mother of the house doesn’t have to holler every morning while simultaneously searching for a missing shoe.
We are into a routine; but we are never THAT good.
Instead, we take one thing at a time and have learned to master it as we go.
Dinner time has been one of the first that we have conquered. Hooray!!!
Around here, we love to eat. 
We love eating at home but we also love the simplicity that comes along with creating fast meals.
So we came up with a meal that is simple and can hit the spot in 15 minutes flat.
It gives us time to search for that missing shoe.
 
Easy Pasta Sauce: {So easy the kids can make it! (and Dad too!!)}
1/2 cup of EVOO
1/4 cup of freshly grated Parmesan cheese
2 tablespoons of minced garlic
1 tablespoon of crushed oregano paste (Fresh would be best if on hand)
2 teaspoons of salt
 
All you need to do is combine the ingredients above and whisk them together with a fork or with whatever you can grab hold of while unloading the dishwasher and simultaneously feeding the dog –you know, all Supermom-like.
Next, boil your pasta and heat up whatever protein you want to add to your meal. We used the Montreal smoked meat that is available for purchase at Costco. You can use precooked chicken or bacon or toss some pre cooked ham in with your cooked and drained pasta. I always toss some baby spinach into my cooking pasta for a few seconds before I drain it. It adds the perfect barely noticeable vegetable to a meat that is super kid friendly. Finally, toss your pasta with the easiest pasta sauce ever and sit down to enjoy a meal with your family.
This quick recipe can hit the table in minutes and I have been known to mess up only one pot in the process in order to save more time. ๐Ÿ˜‰
We also totally mix up our types of pasta to appease the masses of children and their likings around here. (We save the arguments for whether or not they can wear full costumes to school on mornings that ARE NOT Halloween. Picking our battles one day at a time!)

Do you let your kids wear Star Wars masks to school? Do they try to sneak them in their back packs anyways, trying to convince you that it is a hockey helmet
At least I can rock out a quick meal every once in a while that makes all the other stuff disappear as their smiles creep across their faces. (If I peek under that Storm Trooper helmet.)
