For a while now I’ve been looking for fast nutritious dense recipes to enjoy during busy breakfast hours.
Although hot oatmeal and smoothies have been fitting the bill, I’ve been craving the ease of grabbing breakfast without the hassle of actually messing around with making it each day.
Introducing what I’m lovingly calling Strawberry Oatmeal Bake!
This strawberry and oatmeal recipe is precisely what I have been looking for in terms of convenience and nutrition.
Simply combine all your ingredients in one bowl and pour into a greased baking pan.
Bake it until golden (approximately 20 minutes in a 350F oven).
Cut into squares and store it in your fridge for easy access during weekday mornings.
You’ll love the wholesome and sweet flavour of this recipe and the convenience aspect of this grab and go option will leave you more time to soak in the slow spring mornings that are upon us.
Here’s what you’ll need to recreate this goodness.
Ingredients:
• 1 carton of sliced strawberries
• 2 cups oats
• 3/4 teaspoons ground cinnamon
• 1 teaspoon baking powder
• 1/2 teaspoon kosher salt
• 1 3/4 cup unsweetened almond milk, or milk of choice
• 5 tablespoons maple syrup, or three tablespoons of brown sugar
• 1 egg
• 2 teaspoons vanilla extract
If you’re wanting to squeeze in a bit more protein into your breakfast I suggest adding a generous dollop of SKYR Icelandic Style Yogurt on to your bake and finish it off with a sprinkling of brown sugar.
I am smitten with this strawberry delight but also can’t wait to play around with this recipe by adding different season fruit to it in the future.
