There is something about a summer birthday party that calls for a little creativity, especially when you have a theme to work with. When my daughter was planning her 17th birthday party, she wanted a coastal-inspired celebration. I loved the idea of bringing in those classic summer details, from the relaxed seaside feel to the little touches that make a party feel special.
I wanted to make a cake that fit the theme without having to spend hours baking or decorating. obviously, because this was a summer party, and no one wants to spend more time in the kitchen when they can be enjoying the sunny outdoors instead. The solution was surprisingly simple: a classic white frosted slab cake decorated with fresh strawberries arranged to look like a lobster.
The result was a strawberry lobster cake that looked like it belonged at a summer gathering by the coast, but was easy enough to put together at home. The bright red strawberries stood out beautifully against the white frosting, and the lobster shape made it a fun centerpiece for the dessert table.
I especially love ideas like this because you don’t need professional decorating skills or a complicated recipe to create something memorable. With a store bought or homemade sheet cake, a tub of white frosting and a few fresh strawberries, you can make a themed birthday cake that feels thoughtful without adding a lot of extra work to party preparations.
This cake would be lovely for a coastal birthday party, a summer garden gathering, a beach-themed celebration or any occasion where you want to add a playful seasonal detail to the dessert table.

What You’ll Need
- 1 rectangular sheet cake, approximately 9 x 13 inches
- 6 to 10 fresh strawberries, depending on their size
- A small paring knife
- A cake board or serving platter
- A piping bag, optional
- White buttercream or whipped frosting (if needed)
You can bake your favourite vanilla cake from scratch or use a boxed cake mix to keep things simple. A bakery made slab cake works just as well, too. The important part is having a flat surface with enough room to create the strawberry design.
(CAKE TIP: We ended up purchasing our slab cake from Costco. If you go into any location the day before, you can ask the bakery staff to kindly prepare a plain slab cake for you in advance. That way, you won’t have to painstakingly remove the bright and bold “Happy birthday!” icing letters from said cake. If you don’t plan ahead like us, just use a cold flat knife dipped in ice water to carefully remove the premade icing designs.)

How to Make a Strawberry Lobster Cake
Step 1: Prepare and Frost the Cake
Start with a completely cooled rectangular sheet cake. If you’re baking it yourself, allow it to cool fully before decorating so the frosting doesn’t melt or slide.
Spread an even layer of white frosting over the top of the cake. Smooth it with an offset spatula or the back of a spoon, leaving a little texture if you prefer a more relaxed finish.
White frosting works particularly well for this design because it creates a clean background for the bright red strawberries.
Step 2: Create the Lobster’s Body
Wash the strawberries and pat them completely dry. Remove the green tops and set aside a few of the best-shaped strawberries for the claws and tail.
Slice several strawberries lengthwise into fairly even pieces. Arrange the slices in a line down the centre of the cake to create the lobster’s body. Slightly overlap each slice so the pieces form a natural, curved shape.
At one end, arrange a few additional strawberry slices into a fan shape for the tail. You can adjust the curve and length of the body to suit the size of your cake.
Don’t worry about making the slices perfectly uniform. A little variation gives the design a more natural look.
Step 3: Add the Lobster’s Claws
Choose two strawberries to create the claws. Cut them into halves or shaped pieces, then position one on either side of the head end of the lobster’s body.
Angle the pieces outward so they resemble the lobster’s pincers. You can trim the strawberries slightly with a paring knife to create more defined claw shapes.
Take a step back and look at the arrangement from above. Moving the pieces around before settling on the final design makes it easier to get a balanced shape.
Step 4: Shape the Tail
Return to the opposite end of the body and arrange thin strawberry slices into a fan. Place the slices so they spread outward from the last section of the lobster’s body, creating the appearance of a tail.
You can use three or four slices, depending on the size of your strawberries and the look you want. Position them close together at the base and angle them outward at the tips.
This small detail helps make the design recognizable and gives the lobster a finished appearance.
Step 5: Add the Legs and Antennae
Now for the details that bring the strawberry lobster to life!
Cut a few strawberries into very thin strips to make the legs. Arrange several small pieces on each side of the body, angling them outward. Use narrower strips near the head to create the antennae.
You can use the tip of a paring knife to refine the shapes and trim any pieces that look too large. If you have extra strawberry slices, use them to fill in gaps or improve the balance of the design.
There is no need to make every detail identical. The charm of this cake comes from the simple arrangement of fresh fruit.
Step 6: Make the Final Adjustments and Serve
Once all the strawberry pieces are in place, look over the cake and make any final adjustments. Straighten the body, fan out the tail and reposition the claws or legs until you’re happy with the overall shape.
If you’d like, use a piping bag to add a few finishing touches to the frosting around the edges of the cake.
Refrigerate the cake until you’re ready to serve, especially if you’re using whipped frosting. For the freshest appearance, it’s best to decorate the cake relatively close to party time, as cut strawberries can release juice as they sit.
Bring it out just before serving and let the strawberry lobster take centre stage on your summer dessert table.

Tips for Making Your Strawberry Lobster Cake
Choose firm, ripe strawberries. They are easier to slice neatly and hold their shape better when arranged on the frosting.
Dry the strawberries well. Excess water can make the frosting slippery and cause the pieces to move around.
Plan the design before you start. You can arrange the strawberry pieces on a cutting board first to get an idea of the shape and proportions.
Keep the cake simple. White frosting and red strawberries provide plenty of contrast, so you don’t need lots of extra decorations.
Make it your own. A few fresh flowers beside the cake, coastal-inspired serving pieces or a simple blue-and-white party palette can help tie the dessert into the rest of your celebration.

What I love most about this lobster cake is that it turns a simple sheet cake into something personal. For my daughter’s coastal themed 17th birthday party, it was a fun way to bring the summer setting into the dessert table without making another complicated project out of the preparations.
It’s a reminder that party details don’t have to be expensive or elaborate to make an occasion feel special. Sometimes, a little creativity and a handful of fresh strawberries are all you need!
Whether you’re planning a coastal birthday, a summer garden party or a seaside inspired celebration, this easy strawberry lobster cake is a playful idea worth saving for your next warm weather gathering.
