BUT JANUARY ISN’T ALL BAD!!!

So, without further ado, here is my tried and true, guilt free vegan broccoli cheddar soup recipe! This one has been perfected and simplified, so you can enjoy more time organizing your life, because ISN’T THAT what January is also about? 😉
Pull out your soup pot, or simplify your life like we do and get out your handy dandy slow cooker for this one!
Next, compile all of these elements together within your soup ot or slow cooker!
INGREDIENTS:
5 cups of broccoli florets
1 cup of cashew milk
1 peeled large carrot
1 peeled white potato
3 garlic
8 cups of filtered water
1/2 cup of nutritional yeast
1 tablespoon of apple cider vinegar
2 tablespoons of veggie soup powder/ or 2 teaspoons of Vegetta
DIRECTIONS:
Place all of your ingredients into your soup pot or a slow cooker and cook on high for four hours or until vegetables are softened. Use an immersion blender to until soup becomes pureed and creamy.
This soup is the perfect tone and consistency of classic broccoli cheddar soup but without compromising the flavour!
The potato in this recipe becomes the thickening agent to replace traditional flour and the carrot adds that little hint of color the is reminiscent of traditional cheesiness!
This is as simple and healthy as it gets! A soup that is both parts hearty and satisfying, natural and plant based without compromising any flavour! You might even be able to trick your family into thinking this is an indulgent meal.
