Lets face it, all of us are busy people, especially this time of year. So I thought we would share some of our favourite cold weather slow cooker meals with you!
I loved hearing that our Spicy savory curry recipe was such a hit! Crock pot recipes like that one are just so easy and take the extra mess and time out of making a meal.
So, I have another wonderful slow cooker recipe for you that you are sure to love. One that is so easy, filling and healthy that it will turn into a family favourite during these colder months. Less time cooking meals means more time enjoying your family and friends, wrapping those Christmas gifts, decking your halls and enjoying this season that goes too fast.
Introducing: Chicken Stew.
This chicken stew is oh-so-good, you will be wanting to add this one into the weekly meal rotation.
All of these veggies make it oh-so-healthy!
You will need to cut the following so that they are relatively the same size for even cooking time.

One yellow onion

One cup of carrots (I used the baby variety since I had them on hand, but regualr size carrots would be more cost effective and make the stew taste more earthy.)

One cup of celery

One and a hlaf cups of potatoe (I used about 4 medium red potatoes, you can use whatever type of potatoe you prefer)

Three thawed chicken breasts, cut into one inch pieces. (If you are vegetarian, you can substitute with firm tofu. I have tried it and it is delicious)

Put aside approxiamtely one cup of frozen peas and corn (to be added during the last 30 minutes of cooking)

Open a can of condenced cream of chicken soup.

Crush three cloves of garlic.

Dump your chopped veggies, your can of condenced cream of chicken soup, half a can of water, your three cloves of garlic and one tablespoon of dried oregano into your slow cooker.

Mix it all up right in your slow cooker.

Set your timer for 5 hours on high or 8 hours on low.

Once your timer goes off, add your frozen veggies.
Now, you can walk away, spend your time doing those other important things while your stew simmers and fills your house with the most inviting aroma.
Chicken, potatoes and vegetables — simple perfection.
Serve with some bread and butter and you have a classic chicken stew ready to warm up the whole family! (My son even had seconds, and he can sometimes be picky when it comes to certain veggies!) Yah! Mama wins again! The kids even asked for me to serve them the leftovers the following day! And guess what? It was even better the second time around. 🙂
