The Easiest Berry Crisp: A Little Taste of Summer

There are some recipes that feel like they belong in a handwritten recipe box.

The kind you make when the berries are overflowing at the market, when the kitchen windows are open and the house smells like butter and cinnamon, and when everyone seems to wander into the kitchen asking, “Is that dessert?”

This berry crisp is one of those recipes.

But there is a little secret.

You don’t actually need to spend an afternoon picking through baskets of berries or carefully measuring out several different kinds of fruit. While I love a Saturday morning spent wandering through a farmers’ market, sometimes the easiest recipes are the ones that let us get straight to the good part.

For this crisp, I love using whatever beautiful mixed berries are in season at the market. Strawberries, blueberries, raspberries and blackberries all work beautifully together.

Or, and this is my favourite little shortcut, especially when summer is a distant memory; use a bag of frozen mixed berries from Costco.

No peeling. No chopping. No complicated filling. Just berries, a buttery oat topping and a little time in the oven.

It is the kind of dessert that feels homemade in the very best way, and it is also my favourite “breakfast” to whip up on a slow weekday morning to wake rose sleeping teenagers from their seemingly endless slumber.

What You’ll Need:

Ingredients for the berry filling:

  • 6 cups mixed berries, fresh or frozen
  • 2–3 tablespoons granulated sugar, depending on how sweet your berries are
  • 1 tablespoon all-purpose flour or cornstarch, optional, for a slightly thicker filling

Ingredients for the crisp topping:

  • 1 cup old-fashioned rolled oats
  • 8 tablespoons unsalted butter, cold and cubed
  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon

Berry Considerations:

If you’re using fresh berries from the market, simply wash and gently dry them before adding them to your baking dish.

If you’re using frozen mixed berries, don’t thaw them first.

This is one of those little kitchen shortcuts that makes this recipe so easy. Simply, pour the frozen berries directly into your baking dish and continue with the recipe. You may find that frozen berries release a little more juice as they bake, which is exactly what we want for that lovely, jammy filling underneath the crisp topping.

If your berries are particularly juicy, toss them with a tablespoon of flour or cornstarch before adding the topping.

How to Make It

Preheat your oven to 375°F.

Place your berries into a lightly buttered 9×9-inch baking dish. Sprinkle them with the granulated sugar and, if using, the flour or cornstarch. Give everything a very gentle toss.

Now for my favourite part—the topping.

In a medium bowl, combine the oats, flour, brown sugar, granulated sugar, salt and cinnamon.

Add the cold, cubed butter.

Using your fingers, a pastry cutter or two forks, work the butter into the oat mixture until you have a crumbly mixture with some larger buttery pieces throughout.

Don’t overthink this part.

The little irregular pieces of butter are what give the topping those wonderful golden, crispy bits once it bakes.

Scatter the topping generously over the berries, making sure to cover the surface but not worrying about making it perfectly even.

How to Bake It:

Bake for approximately 40–50 minutes, until the berries are bubbling around the edges and the topping is golden brown.

If you’re using frozen berries, it may take a little longer—closer to 50–55 minutes.

Let the crisp rest for about 10–15 minutes before serving.

And then, if you’re anything like me, serve it warm with a scoop of good vanilla ice cream.

Because some things simply don’t need improving.

A Few Little Chef Notes:

Cold butter matters.

It may be tempting to let the butter soften, but cold butter creates those beautiful little pockets throughout the topping that become golden and crisp in the oven.

Don’t skip the oats.

They give this crisp its wonderful texture and make the topping feel hearty without being heavy.

Use whatever berries you love.

There really isn’t a perfect combination. Blueberries and raspberries are wonderful together, but strawberries, blackberries and even a handful of cherries can be added when they’re in season.

And if you happen to have a bag of frozen mixed berries tucked away in the freezer, use them.

There is something I love about recipes that don’t require perfection.

Serve It Warm

This is the sort of dessert I imagine sitting on a kitchen counter all afternoon. A little scoop missing here. Someone coming back for another spoonful there. The berries still warm, the topping crisp and buttery, and vanilla ice cream slowly melting down the sides. It would be lovely served after a summer dinner outside, but honestly, I don’t think you need an occasion.

Make it on a Tuesday.

Make it because you found beautiful berries at the market.

Make it because you remembered that bag of Costco berries hiding in the freezer.

Or make it simply because there is something wonderful about filling your home with the smell of warm cinnamon and baked fruit.

The easiest recipes are often the ones we return to again and again. And I have a feeling this little berry crisp will become one of those recipes in your home like it is in ours.

Simple berries. A buttery oat topping. A little vanilla ice cream. Perfection in a pan.
