I love being home with all of my little people, I love when we stay up later than usual and we snuggle on the couch and we watch tv extra late and spend quality time together. That is what weekends are made for, right?
Best of all, I love it when quality time is accompanied by yumminess.
Sometimes we make a big bowl of sticky buttery popcorn to share, or we snack on a package of gummy bears, beheading each as we go; but when we are feeling extra healthy, we opt for this deliciousness.
Avocados are a favorite around here. Our baby boy has been eating them hole since he was born and they have been known to be thrown into my diaper bag with a spoon and will be peeled and fed to any one of our kids at any given time.
But, our favorite way to eat them is to turn some simple avocados into some easy and impressive guacamole.
To make this you will need:
1 large ripe tomato
3 avocados, very ripe but not bruised
juice 1 large lime
handful coriander, leaves and stalks chopped, plus a few leaves, roughly chopped, to serve
1 small red onion, finely chopped
1 chili, red or green, deseeded and finely chopped
I like to keep this recipe simple since that is when it tastes the most flavourful and fresh.
To make, first, chop your tomato, then peel and mash your avocado, then finely chop or mince your coriander, red onion and your chili. Simply mix together in a bowl and serve fresh with tortilla chips or crackers. Spread on baguettes or on top of tacos or fish too, or if you are like us, just eat it with a spoon!
You might want to double or triple this recipe if you have friends stopping by this weekend, cause, I’m telling you, this one is sooooo delicious and authentic. No mess or stress just yumminess.
