Not because I am trendy, but maybe because I have spent a lot of my summer periodically wearing Spanx, I now have a confession to make.
I love bread.
I love bread so much.
I love bread, but bread seems like it wants to end our love affair.
Bread wants to break up with me.
I have always been the one that overlooked white bread and instead reached for brown, whole wheat, whole grain, flax…and the list goes on an on. I always felt like I was making the right decisions when it came to choosing what kind of bread I brought home for my family or what kind of bread I made at home, and even what kind of bread we ate at fast food restaurants.
So you can imagine my horror, as a self proclaimed health enthusiast, when I gained eight pounds in a week and looked like I was six months pregnant. All because of BREAD!
I am not even kidding.
I would show you the horrifying pictures, but this is the Internet people. I am not that crazy.
But that insta-belly I developed in a few short days WAS craaaaaazzzzzzyyyyyy.
With a little Google search, combined with a lot of worrying and speculation, I decided that I would cut gluten out of my diet and “just see” what would happen to me and my belly that was getting quizzical looks from neighbours and children alike.
To make a long story short, my distended stomach slowly dissipated, my compulsive need for Spanx dwindled and I came to the personal conclusion that gluten was the culprit for me looking 6 months pregnant without the excitement of actually being pregnant.
So, I burned the Spanx, threw away their ashes and added every kind of wheat free flour to my baking cupboard.
I will talk more about this whole confusing journey later, but for now, I want to share with you a recipe that kept me away from devouring the stacks of fluffy pancakes, and other carbs, my children still demanded on lazy weekend mornings and on highly anticipated “Pancake Tuesdays.”
If you are on a gluten free adventure, like I am, then you can visit your local “bulk barn” to stock up on flours that you and I both, never knew existed.
You will be running home with all of your new flours to try this recipe. It is ahhhhh-maaaa-zzzziiiiinngggg.
First, gather all of your ingredients.
Mix your gluten free pancake batter, and set aside.
Next, warm up your pan and heat your coconut oil in it.
Once it is fluid, spin your pan to coat in the oil.
Then, slowly pour in a quarter cup of your pancake mixture at a time.
Spread it around to make sure that your pancake is of equal thickness throughout.
Flip and cook onto opposite side, once your pancake has set and is slightly golden in colour.
Serve with maple syrup, with honey, or with a combination of your favorite fruits and toppings.
These gluten free pancakes are so delicious that I have ended up making two batches each time I have cooked them. I then end up freezing a stack, by placing wax paper between each pancake and placing them in our kitchen freezer for easy access.
When the kids want regular pancakes, I take out a gluten free one or two, or three and cook it in our toaster.
So far, on my gluten free adventure, my belly and my taste buds are thanking me for this recipe.
You won’t be disappointed!

I was gluten free 6 months ago and I lost my belly and 5 lbs. This just reminds me I need to go back to it. My friend actually works at a website called gfreefoodie.
