What to cook Wednesday – Boo! Bars

 
This Wednesday is brought to you by the letter “B”
 
“B” for “Boo! Bars”!!!
 
 
Don’t laugh. My three year old came up with the name. 
 
 
And you won’t be laughing when you have a pan full of this goodness at your disposal. 
 
 You will be too busy stuffing your mouth full of all this deliciousness while shielding the beloved pan with your body from anyone who might want to steal a bite.
This is no laughing matter.
These are “Boo! Bars”
 
 
The base of this bar is made with any boxed cake mix. This is literally so easy that my daughter made these with little help.
 
 
 
In one bowl combine
 
1 (approx 18 oz) cake mix (we used rainbow chip, though we have used chocolate and vanilla and both have been fight-for-the-last-bite-worthy)
1 cup of quick cooking oats
3/4 cup chopped nuts
1/2 cup butter or margarine melted
1 egg
 
Reserve one cup of the mixture and spread remaining into the bottom of your greased 13 by 9 baking pan, get a little child to press it down with their
“Musk-les”.
 
Put in your preheated 375F oven, set a timer for 10 minutes
 
In your second bowl combine:
 
1 cup shredded coconut
1/2 cup of dark chocolate chips
1/2 cup of butterscotch chocolate chips
1/4 cup of chopped walnuts
1/2 raisins
 
When your ten minute timer goes, pour one can (14-ounce) of sweetened condensed milk over the baked mixture and spread evenly. Spread remaining mixture and your second bowl of ingredients on the top and put back into the oven for 20-25 minutes or until golden brown.
 
 
Sit back and impress your loved ones with this deliciousness.
 
 With these ooey-gooey, Boo-tiful, boo-tastic, booty-licious “Boo! Bars”!!!
(I couldn’t resist.)
 
 
This little sweetie practiced her “scary face” the whole time we cooked these up. It was adorable.
 
When I asked her why she named them “Boo! Bars!” she explained they were full of surprises. Which is more than true. Feel free to mix up whatever goodies you have in your cupboard for the topping to these bars. M&M’s work great and so does left over Halloween chocolate all chopped up. Mix and match your favourite toppings and these bars will be a surprise for all every time!
