Best Bruschetta for your Superbowl Party!

 
 This weekend is the Superbowl, and if you are like me, you enjoy a good Superbowl party like any cheering-man-clad-in-his-teams-jersey-screaming-at-the-television. 
The only difference between my love of a Superbowl party and the guy next to me gripping his drink and keeping eye contact with the game on the television, is that I am in attendance at the the party simply and solely for the food.
Nothing beats the goodness that comes out when men and women gather to cheer on their team. 
Chicken wings, chili, dips galore…it is all the food that really makes a great party! 
As an honorary party planner, I know this all too well.
So many of us are still forging ahead with our New Years resolutions to eat clean and be a healthier all around person. So many of us, that are still watching our food consumption, get over looked at Super Bowl and are faced with deep fried wings or double deep fried wings! 
Well, I have not forgotten about your promise to be a healthier version of yourself!
 So, I bring to you, a recipe that will make your Sunday a Superbowl and not a Sorrybowl!

 This bruschetta can be made the night before and can be served with nacho chips or baked on your favourite crusty bread with feta or cheese on top. Delish!!

Here is your easy recipe, for the tried and tested, BEST Bruschetta!

1 can of chopped tomatoes (drained)
1 medium red onion chopped
3 cloves of garlic pressed
3 basil leaves chopped
1 teaspoon of extra virgin olive oil
1/2 teaspoon of salt
1/2 teaspoon of pepper

Mix all ingredients together and seal in a container. (Note: This is full of garlic and needs to be covered so it doesn’t stink up your whole fridge.)

Preparation for this takes five minutes tops!! It keeps in the fridge for a week and is delicious combined with cottage cheese for a protein and vitamin packed dip for veggies or crackers.

 Since this appetizer takes only five minutes to make, it will leave me you with a few minutes to google who is playing in the Superbowl, some of the players names, and maybe the rules of football — so you aren’t totally out of the loop at your Superbowl party! 😉

And if you end up not remembering what team is what, and how many points each team has, that is OK, cause you made the best bruschetta at the party, and that is what makes a good Superbowl PAR-TAY anyways.
