Quick Spicy Savory Curry

 
Happy Wednesday!!
 
I love the idea of learning a  new recipe on a Wednesday. That allows a few days to make the new meal during the week; or time to go to the grocery store and make it special for the weekend.
 
To give you something to expect, most Wednesdays you can look forward to reading a post here that features an efficient healthy meal or dessert.
 
Something that is full of flavour and leaves you wanting more and yet leaves  your kitchen sink with fewer dirty dishes.
 
So let me introduce to you the easiest meal on earth.
 
 
Your eyes are not playing tricks on you. There ARE only three things in the above picture. For this easy crock pot meal you will be left with two dirty dishes, both of which you will be licking clean.
 
 
For this dump-in-the-crock-pot-and-leave recipe you will need:
 
1. One jar of VH Indian Markets’ “Vindaloo”
(This isnt the creamy variety. Infact there is only 180 calories in 1/2 a cup and 3 grams of fat)
2. One large can of diced tomatoes.
3. 3/4 cup of chopped cilantro (you may know this as coriander)
4. For the protein in this meal you can use a can of drained chickpeas or 4 frozen chicken breasts.
 
(I have used both protein options and both are delicious!)
 
I love this meal for so many reasons.
It is literally the fastest meal to make and curbs that quick on set craving for Indian food that would put you back an easy $20 a person.
 
And even though this has pre packaged ingredients there is no denying the fact that they are good ones.
 
Tomatoes are overflowing with vitamin A which is good for healthy continued development of your eyes and vitamin C which helps your body fight infection. Cilantro is a natural cleansing agent for the body, it is known for removing heavy toxic agents from your body and known to decrease inflammation in the body.
Sounds pretty good to me! We will be easily fighting off cold season this year!
 
 
Pop all ingredients into your crock pot on high for 5 hours. or on low for 9 hours. You will be walking in the door to the smell of spicy cumin and savory curry.
 
Simplicity at its best.
 
Toss some basmati, jasmine or brown rice into your rice cooker and go call the family for dinner.
 
I am sure this will be one you keep stocked in your pantry for those last minute meal ideas!
